Easy, Banana Bread Recipe
- 1cup sugar
- 1/2cup shortening( or butter)
- 2 eggs
- 2 cups flour
- 1/2 cup chopped walnuts
- 1 teaspoon baking soda
- 3 soft, ripe bananas, mashed
- 1 tsp vanilla
Cream sugar and shortening; add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter in to 1 greased and floured loaf pan. Bake at 325 degrees F for about 1 hour and 15 min, or until a toothpick inserted in center comes out clean. Makes 1 loaf.
(I like to sprinkle cinnamon and sugar over the top before baking.)

LIZARD SKINS
With boys anything reptilian is cool! They are very easy to make and bring a grin when you say, "We're having Lizard Skins!" The name sounds nasty, but the taste is divine ...
LIZARD SKINS
1/2c Peanut Butter
12 oz. Marshmallows
2 to 4 drops Green Food Coloring
4c Crispy Rice cereal, Cornflakes or Oat ring cereal
16 raisins
Melt peanut butter and marshmallows in a large saucepan over low heat. Mix in food coloring. Pour in cereal and stir quickly. Spread cereal into a greased 8x8 baking pan. Cover and cool in the refrigerator. Cut cereal mixture in 8 long strips. Then cut the strips in half to make 16 strips, 1x4 inches each. cut raisins in half and stick the 2 halves on one end of each strip to make lizard eyes. Yum!

Reading makes Good eating!! My children loved this book, Tricky Fox, we borrowed from the library. Tricky Fox and his brother make a bet and the loser has to eat his Hat! They walked around with a stick cane trying to "trick" each other like Tricky Fox. It deserves a place in every child's library!

Quick, Easy -N- Fast Flourless Peanut Butter Cookies Recipe
1 C. peanut butter
1 C. sugar
1 egg
1 t. baking soda
Cream the peanut butter with the sugar. Stir in the egg and baking soda. Roll into balls. If the dough is
initially too thin to roll let it sit 10 minutes and it will thicken. Bake at 350°F. until the edges of the cookies turn golden brown (do not overbake or they will turn hard and crumbly)

NESTLE' OATMEAL SCOTCHIES
1 1/4C unsifted Flour
1tsp Baking Soda
1/2tsp Salt
1/2tsp Cinnamon
1c Butter, softened
3/4c Brown Sugar, Firmly packed
3/4c granulated Sugar
2 Eggs
1tsp Vanilla Extract
3c Old-Fashioned Quaker Oats
1 (18 1/3 oz) package Nestle Toll House butterscotch-flavored morsels (about 2 cups)
Preheat oven to 375 degrees F.
Combine flour, baking soda, salt, and cinnamon in a small bowl; set aside.
Beat butter, granulated sugar, brown sugar, eggs, anmd vanilla in a large bowl.
Gradually beat in flour mixture.
Stir in oats and morsels.
Drop by rounded Tablespoonfuls onto an ungreased baking sheet.
Bake 7 to 8 minutes for chewy cookies, 9 to 10 minutes for crisp cookies.
Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.

SIMPLE, EASY PEANUT BUTTER NO-BAKE COOKIES

1/4c Butter
1/2 Milk
1c Peanut Butter
1 tsp Vanilla
2 3/4c Rolled Oats
In a large saucepan, mix sugar, butter, and milk. Bring to a full boil over medium heat.
Remove from heat and stir in peanut butter and vanilla. Stir until peanut butter is melted. Stir in oats.
WORKING QUICKLY, drop by spoonfuls onto waxed paper covered newspaper.
Makes about 24 regular sized cookies.
