Janey's Banana Bread

Janey's Banana Bread

This banana bread is yummy by itself or spread with butter, jam or ice cream! In our family of eight, it takes a mighty stern look to make it last more than a day.

1cup butter or cocoa nut oil, softened
1 1/3cup sugar
4 very ripe bananas, mashed
1 1/2 tsp vanilla
4 eggs
1 1/2 cup white flour
1 1/2 cup whole wheat flour
1/2 tsp salt
2 tsp baking soda
1 cup sour cream
1 cup nuts

Mix butter or oil with sugar, add mashed bananas, vanilla and eggs. In another bowl, add white and wheat flours, salt and baking soda. Stir with whisk to mix. Combine banana mixture to flour combo and stir. Last add the sour cream and nuts. I don't know that it makes any difference adding the sour cream last, but it is just the way I do it. Nuts are optional and I have been known to forget them.

Place your banana bread mixture in two oiled bread pans or an oiled pound cake ring. Bake for about 35 at 350 F in the bread loaf pans. Bake about 75 minutes in the pound cake ring. After removing from oven, let your bread sit and cool enough that the bread pulls away from the pan. You may have to use a knife to cut it away.

Easy, fun Monkey Bread Recipe

My dearest friend in the world sent me a recipe that makes my mouth water just thinking about it. Since I am terrible about keeping track of things like this. Right here on the web is the safest place. You all won't lose it ? Right?!

Easy fun recipe. Thought I would share.

Monkey Bread

3 cans of biscuits

2 teaspoons cinnamon

1/2 cup chopped pecans

1 cup sugar

1/2 cup raisins

1/2 cup brown sugar

1 stick of butter

Cut biscuits in fourths. Shake in bag with cinnamon and sugar. Arrange in greased bunt pan. Sprinkle with raisins and nuts. Melt butter and brown sugar until sugar is dissolved. Pour over biscuits. Bake for 30 minutes at 350 degrees.

BEST PEANUT BUTTER COOKIES EVERRRR! RECIPE

This is an absolutely awesome recipe!!!

At my house, it does not matter if the batter ever makes it to the oven. I could eat spoonful after sweet, gooey spoonful until I got sick, but that's not a good example for the children.

A batch of it will be what I am giving for Christmas this year. Try it for yourselves and you will see why. This peanut butter cookie recipe is divine.

INGREDIENTS (Nutrition)

* 2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1 1/4 cups packed brown sugar
* 1 1/4 cups white sugar
* 1 cup butter, softened
* 3 eggs
* 1 cup creamy peanut butter
* 2 teaspoons vanilla extract


DIRECTIONS

1. Preheat oven to 300 degrees F (150 degrees C).
2. In a medium bowl, combine flour, soda, and salt. Mix well with a wire whisk set aside.
3. In a large bowl, blend sugars, using an electric mixer set at medium speed. Add butter, and mix to form a grainy paste, scraping the sides of the bowl. Add eggs, peanut butter and vanilla and mix at medium speed until light and fluffy.
4. Add the flour mixture and mix at low speed until just mixed.
5. Drop by rounded spoonfuls onto an ungreased cookie sheet. With a wet fork gently press cookies in a crisscrossed pattern. Bake for 18-22 minutes or until slightly brown along edges.
6. Find your happy place and enjoy!

Simple, Easy Vanilla Wafer Cookies

VANILLA WAFER COOKIES

Vanilla wafers have a special place for me. My mom used to make banana cream pie and I remember the vanilla wafers would get soaked with pudding and have just the right consistency for scraping off and topping ice cream. Yum! Now, I just want to dunk 'em. Contrary to Oreo's opinion, Vanilla Wafers are milk's true favorite cookie.


1/2c Butter Softened

1c Sugar

1 Egg

1Tbsp Vanilla

1 1/3c Flour

3/4tsp Baking Powder

1/4tsp Salt

Cream butter and sugar. Beat in egg and vanilla. Combine Dry ingredients. Mix well. Drop by teaspoonfuls on ungreased baking sheet. Bake at 350 degrees F for 12-15 minutes.

Simple, Easy Banana Bread

Easy, Banana Bread Recipe

- 1cup sugar
- 1/2cup shortening( or butter)
- 2 eggs
- 2 cups flour
- 1/2 cup chopped walnuts
- 1 teaspoon baking soda
- 3 soft, ripe bananas, mashed
- 1 tsp vanilla

Cream sugar and shortening; add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter in to 1 greased and floured loaf pan. Bake at 325 degrees F for about 1 hour and 15 min, or until a toothpick inserted in center comes out clean. Makes 1 loaf.

(I like to sprinkle cinnamon and sugar over the top before baking.)

LIZARD SKINS

With boys anything reptilian is cool! They are very easy to make and bring a grin when you say, "We're having Lizard Skins!" The name sounds nasty, but the taste is divine ...



LIZARD SKINS


1/2c Peanut Butter

12 oz. Marshmallows

2 to 4 drops Green Food Coloring

4c Crispy Rice cereal, Cornflakes or Oat ring cereal

16 raisins




Melt peanut butter and marshmallows in a large saucepan over low heat. Mix in food coloring. Pour in cereal and stir quickly. Spread cereal into a greased 8x8 baking pan. Cover and cool in the refrigerator. Cut cereal mixture in 8 long strips. Then cut the strips in half to make 16 strips, 1x4 inches each. cut raisins in half and stick the 2 halves on one end of each strip to make lizard eyes. Yum!

Sift together:
2c Flour

1 1/2 tsp baking powder

1/2tsp baking soda

1/2tsp nutmeg


Cream together:
1/3 c butter

1c sugar

1 egg

1Tbsp vanilla flavoring



Preheat oven to 350 degrees F. Mix flour mixture and sugar mixture with electric mixer. Cover and cool in fridge for 30 min. Roll chilled dough 1/4 in thick. Cut in shapes of hats (or other fun shapes). Place on greased cookie sheet. Bake 5 min

Reading makes Good eating!! My children loved this book, Tricky Fox, we borrowed from the library. Tricky Fox and his brother make a bet and the loser has to eat his Hat! They walked around with a stick cane trying to "trick" each other like Tricky Fox. It deserves a place in every child's library!
